Got home from work and had 16 points to use for dinner. And HOLY BUJEZZEEZ did I make the most of those points! End up an ENTIRE CAN of corn has only 5 points, 2 cups of Instant Mashed Potatoes (prepared) had just 6, and I can turn a can of Chicken Broth (tecnically 0 points per serving, but since it was two servings I rounded up to 1) in to a very nice gravy/sauce with less than 2 points of unleached flour (0 points for a teaspoon, but I didn't think I could thicken very well with just that much so I went up to the next measurement on the bag - a 1/4 cup for 2 points). Round it out with the 1-oz onelss/skinless chicken breast I had left over in the fridge and I had a HUGE meal that came in at 16 points!

Unfortunately, I just couldn't eat it all; it wouldn't all fit on the plate!

So I had half the corn, all the mashed potatoes and 1/3rd of the excessively thick gravy. Next time i make gravy I'll start with the teaspoon and work my way *up* I think.

So last night's dinner came in at maybe 10-12 points. And then just before bed I had a 2-point desert of Yoplait Starwberry Yogurt, and it didn't make me barf! It was actually quite good!

Today I'm going to try and focus on getting up to at least 30 points before bed. Every source I have talked to so far says I should actually be at 34 points with an aditional 35 "Flex Points" per week, so i figure if i can do THIS week on such a low amount of points then the rest of the diet should be easy as pie!
