Tuna on rice is a piece of nigiri sushi. Sashimi is when it's just fish, no rice.

So, are those numbers up there how many pieces? Anyway, I'd count the shrimp tempura as 1 point per piece, because of the deep frying. Everything else is probably right - I'll let Chris address that.
