Since it was just
khristle, Molly, my parents and I celebrating Thanksgiving up here in Mount Vernon, I decided to volunteer for Chef Duty. And I did it ALL (except the Escalloped Corn, which is the specialty of my wife).
The Turkey, I did with a combination of influences from several different Food Network stars. Didn't have time to Brine it or deep-fry it, so I made a poultice of herbs, spices and butter. Rubbed that mess all up in under the skin, cooked it at 500-degrees for a half-hour then slow-roasted at 350 with tin-foil over the breast till it was just falling apart.
For ther first time in all of forever, the Thanksgiving Turkey was MOIST. And cooked PERFECTLY.
Also on the menu was whipped potatoes, gravy, cranberries, stuffing, yadda yadda yadda... but my TURKEY! i was just so happy that I got to cook a turkey this year :)
