Dinner: Zero-Carb Turkey Meatloaf, The Worst Acorn Squash Ever

I stuck around the house all day long yesterday, waiting for our landlord to bring our new dishwasher - no luck. But at least I was able to get a lot of "Hard Cleaning" done, like clearing the table, washing the kitchen floor, cleaning the kitchen cabinets and various other stuff. And then I ALSO made my Zero-Carb Turkey Meatloaf, which is actually about 7 carbs spread out among some 20 servings of meatloaf. I use crushed pork rinds soaked in heavy cream instead of bread crumbs/crackers, and three eggs mixed in the 2+ pounds of turkey, and I sauteed some onions and zucchini till they were very soft to mix in there as well. See, the problem with a Turkey Meatloaf, usually, is that turkey is not a MOIST meat at all when cooked, so the challenge is to bring moisture in to the dish. The zucchini and cream-soaked pork rinds did the trick *perfectly* :)
