I can hardly wait till I get home so I can start cooking! I'ver got this mutha all cooked in my head, all I need to do is follow through!
First, I'll poke some potatoes and stick them in the microwave to cook for about 8 minutes. They're gonna take the longest to cook. Also, turn the broiler on.
I'll stick the asparagus in the steamer with some garlic and onion in the infuser-thingee to taint the steam and get them cooking.
Then I'll dig out the big cast-iron pan and put in a splash of olive oil and get it nice and hot. Season the salmon with salt and some Garlic Chives, toss it in the pan, squeese a lemon over it then take the hot pan and stick it under the broiler for maybe 5 minutes or so.
Take the pan out of the oven and put it on a medium-high burner, remove the fish and put it on the plate.
Toss a tablespoon of butter and a fistfull of chopped Garlic Chives in to the hot pan and then deglaze with a cup of white wine, let that cook down till it's a bit thicker (but not too thick), add a pinch of salt and a grind of pepper to taste.
Plate-up the asparagus and the Potato, drizzle the sauce over both the asparagus and the salmon. Pop open the potato and add butter, Fat-Free sour cream and yet more garlic chives.
Oh my goodness I can hardly wait!!!
