Home-made Stuffing to go with our baked chicken dinner tonight, destroyed in the final stages. My usual way of preparing a "Traditional" stuffing to go with chicken includes cubing a bunch of old French Bread and sticking it in the oven, sauteing onions and celery and carrots and garlic with a bunch of fresh herbs in Olive Oil, drizzling the resulting oil/veggie mixture over the toasting bread cubes in the oven and then slow-roasting that for a few hours while I prep the rest of dinner. Very simple, tastes a lot like "Stove Top" Stuffing. Sometimes I'll add some nuts and fruits if I'm feeling sassy.
However, tonight I left the mixture unattended for too long and got a baking sheet full of black.
SO! Dump the smoldering remains in to the sink and start over again with just 15 minutes till dinner!
Took the roasting pan from the Chicken, still full of drippings and goodness, put it over a medium burner.
Started cubing the leftover half-loaf of French Bread, tossing fistfulls in to the hot roasting pan as soon as they were cubed. Toss a bit in the hot drippings before going to cut more bread cubes.
Out of onion. Grated an entire fresh carrot in to the roasting pan and tossed with bread and drippings. Toss in a fistfull of raisins 'cuz I'm feeling Sassy. A dash of Celery Seed, a bit of salt and pepper... then two cups of chicken stock that was created from - get ready for it - A FOIL PACKET OF RAMEN NOODLE SEASONING.
Cooked till all the liquid was absorbed, and it was AMAZING! Quite possibly the best stuffing I've had/made EVAR.
