Inspired by
nani_ka's suggestion of a Escalloped Ham & Potato Casserole... it went in a nearly completely different direction.
Bust things about this dish is that it's GREEN, has a TON of Broccili in it, and you can't taste the broccoli AT ALL.

- Turkey-N-Broccoli Cheddar Noodle Casserole
- 1 Lb Pressed Turkey Breast, cut in to bite-size cubes (could be pretty much any type of meat though)
- 1 Lb Frozen Broccoli, steamed and pureed
- 8 Oz Sharp Cheddar Cheese, shredded
- 2 to 4 cups of Milk, the fattier the better
- 2 cloves of Garlic, minced or crushed
- 1/2 Cup White Flour
- 2 to 4 TBSP Bacon Grease
- 3 Cups Uncooked Egg Noodles, mostly cooked ("Aldente") and drained (don't know how many cups of cooked noodles that is)
- Crackers or Potato Chips
- Salt and pepper to taste
Make a nice loose roux from your bacon grease and white flour. Reduce heat and slowly stir in your milk, making a nice thick sauce. BE CAREFUL NOT TO BRING IT TO A BOIL! Try to keep it just under a boil. Add the Garlic. Slowly stir in your broccoli puree and then your cheddar cheese. When you look in the pan, you should think that it's about as thick as that nacho Cheese they give you at 7-11 and other fine restaurants. Dump in your Turkey and let it get warmed all the way through, then dump in your noodles. Pour in to a big old casserole pan (I used a 9"x11" Pyrex Pan) and top with crushed crackers or potato chips (we used a sleeve of Ritz Crackers). Bake at 375 for oh, I dunno... half an hour? Till the top is all crispy and brown.
