Oh yeah, spinach... two cups uncooked = 1/4 Tablespoon cooked. Forgot about that...

To add some extra taste to the spinach, try cooking it in chicken broth with some balsamic vinegar.

I prefer to take the "Crouching Tiger Hidden Veggie" approach - Spinach is an *ingredient*, not a dish :)

Same! At least for spinach. I don't like the texture.

Exactly! But I fint that if I chop it up real good and put it *in* something, I don't mind so much :)

Dehydrating a bunch of Kale right now in hopes that it is tasty like chip (as I have had them), and if not it'll be ready as a recpie additive that's chok-full of vitamins :)

I've heard good things about Kale. Let me know. Kale is allowed on my diet.

All of your meals sounded tasty, but breakfast sounded awesome.

It was :) It has inspired me to try Chorizo & Eggs again (haven't tried that since the 90's)!

Mmm, winter squash. Trader Joe's sells cubed butternut squash in easily microwavable bags. Soooo good. I miss Costco's seasonal cubed butternut squash.
