Why is it that you bake cookies, but cook bacon?

Anywho...

Thanks to [livejournal.com profile] nani_ka and The Lynnwood Foodbank, I have massive quantities of perishable foodstuffs that will need to be made in to other perishable foodstuffs for freezing - AND FAST!!!

BANANAS!!!
APPLES!!!
CORN!!!
PUMPKIN!!!

Well okay, the Pumpkin is canned... but only for a few more weeks! I figure we'll start off making loaves of Pumpkin Apple Bread using canned pumpkin for now, then switch over to Banana Apple Bread once the Bananas get all blackish. Gonna blanch the corn right on the cob and freeze it that way. Gonna attempt a few Apple Tartlets, Apple Butter and Apple Brown Betty. Then, on the day after Halloween when all the pumpkins will be FREE, it's back to Pumpkin Bread!

I love making banana bread.

apple tartlets sound like a good idea.

You know you can use (unsweetened) applesauce as an oil or egg substitute, and mashed banana as an egg substitute? At least in quickbread and muffin type stuff.

I don't think I could fit in my oven just to eat some bacon, so I'll have to take your word for it.

i'll have to send you my applesauce bread recipe. the smell alone is worth the time spent making it.

Peel the bananas, separate them into single-batch packets - leftover plastic bags, tupperware, old cottage cheese containers, etc - then freeze them like that. When it comes to making bananabread, they don't have to resemble bananas. Voila! Non-perishable.

Also, if you have limited numbers of tupperware, you can mash & freeze the bananas, then once frozen pop them out of their "molds" & put them in a big old bread bag for freezer storage.

I should have given you more corn. I just finished blanching/cutting it all, and i've ended up with 2 BIG ziploc freezer bags FULL of corn kernels...
